Under the menu item "Configuration > Order total" you can control which fields appear on the order confirmation and in the summary at checkout.
Basically, there should be no need to make changes here.

Note: here it is easy to make unintended changes that can ruin the shipping setup or payment, so it is recommended to contact customer service if you want to make changes.
